We are twenty days away from the lazy days of summer. I love all seasons equally but have you ever heard anyone running down the streets screaming, "hooray! It's WINTER!"? No. It. Doesn't. Happen.
Summer means porches, lemonade poured from antique glass pitchers, and pimento cheese. Yep, I was that child who if given the choice between Disney World and living on the Country Time Lemonade commercial set would have chosen the latter.
Now, trust me, I'm not talking about the crusty dip from the local grocer but the homemade goodness chock-full of those heart-warming ingredients: cheese and mayonnaise.
I came across this recipe in Garden & Gun magazine and it is the real deal. It would be a sin in heaven to change it:
Pimento Cheese
2 cups extra sharp cheddar cheese, grated
1/2 cup Duke's mayonnaise (it really does make a difference to use Duke's)
1/2 cup pimentos, drained and chopped (7-oz jar)
1/4 cup green onions, chopped
1 tsp. black pepper
1/2 tsp. salt
1/4 tsp. cayenne or ground red pepper
Dash of Tabasco
Stir and refrigerate for at least an hour or whenever you feel motivated to leave the rocking chair. Serve with crackers or grilled bread.
