love in all seasons


"If you don't like the weather, just wait a minute and it will change" was the first quote I heard when I moved to New England. I snapped this photo yesterday. Today is a different story. With the snow falling and time on my hands, I am finalizing my Valentine's menu. Why not decide on dessert first? Warm brownies drizzled with sugared raspberries and topped with basil whipped cream.

Over the summer, I picked organic raspberries and made sugared raspberries from The Gift of Southern Cooking.
2 cups of raspberries
2 cups of sugar

mix with 2 forks and it keeps for up to one year under refrigeration.

This is the most dazzling recipe in the middle of winter.



Basil Whipped Cream:
1/2 pint whipping cream
3 tbsp. sugar
1 tsp vanilla
1 tbsp fresh basil sliced very thin (do not substitute)

Whip cream with mixer, when it begins to thicken add sugar and vanilla. Stir in basil and place in refrigerator for at least one hour.
