Homemade Ricotta

I stumbled upon a homemade ricotta recipe on Sunset Magazine's website. I have always heard it is easy to make ricotta but I have been a naysayer. I'm still a naysayer! This recipe looks technical(aka: visions of a soupy mess and a wasted afternoon). But, in the sort-of-technical-but-not-at-all way (aka: pour milk, pour vinegar, do a little stirring and voila!).

We'll see. I'm envisioning an earl grey ricotta cheesecake with a lemon drizzle. Keeping my eye on the goal!
